Chris Wark’s Cancer Story
Chris Wark, author of Chris Beat Cancer, was diagnosed with stage IIIC colon cancer in December 2003. He explained to me how it was a panicked time, as doctors quickly rushed him into surgery. After he underwent surgery to remove part of his colon, the hospital fed him a sloppy joe. Something clicked for Chris then. He had been eating the standard American diet, meals containing a lot of meat and processed foods. He made a connection that perhaps his diet had contributed to his cancer. What if he did something different? Chris decided to opt out of chemotherapy and began eating a plant-based diet that incorporated juices and raw foods. One of my favorite dessert recipes ever! I am so excited for you to try this—particularly if you love the combo of ice cream and chocolate sauce. These bites are so nutrient-dense that they are incredibly satisfying.
This is an example of what I call an "Upgrade". When we crave ice cream, this is a way to enjoy it in a healthier way. It's made with cashews, coconut oil, lemon, vanilla and maple syrup. The Chocolate Sauce is just 3 ingredients: cacao powder, maple syrup and coconut oil. This is a much healthier ice cream alternative to one that has white sugar, corn syrup, dairy and other crazy preservatives. It's made with whole ingredients.
This ice cream recipe is something we actually get nutrition from. It's total bliss! This is an example of a sweet food that I advise my clients are safe to eat (because they are nutrient-dense).
