BLUEBERRY CHIA SEED JAM
This jam will last up to two months in the refrigerator and six months in the freezer.
Total time: 20 minutes
Makes 12 servings (about 2 tablespoons per serving)
Ingredients:
2 cups blueberries (strawberries work well too)
1 cup filtered water
1/4 cup chia seeds
1/4 cup maple syrup or honey
Actions:
1. Place all the ingredients in a pot and bring to a boil.
2. Reduce the heat to a simmer and stir constantly so the chia seeds do not burn on the bottom of the pot.
3. When the mixture has thickened and the fruit is entirely broken down (about 10 minutes), allow to cool and then place in a glass jar and cool completely before placing in the fridge. The jam is now ready to eat, but if you refrigerate it overnight, the jam will set more. Serve on Gluten-Free Rolls or as a garnish for any dessert.

• Use raspberries for Raspberry Chia Seed Jam.
• Use mulberries for Mulberry Chia Seed Jam.
